In 2015 I became a vegan! It was a gradual transition from veggie to vegan and, when I decided to start eating more plant based food, I didn't know where to begin! I found the process of cooking boring and uninspiring, until I started cooking VEGAN!! I bought some cook books and decided to start with a new recipe each week. I was cooking with ingredients I had never used before! Jackfruit, black beans, tahini, miso, tempeh, tofu, cashew nuts, plant milk, coconut oil, dates, nutritional yeast, tofu and so much more! Vegetables became the heart of all my recipes instead of just the floppy green bits on the side! I felt like I had opened up a new world of possibility. Vegan food was fun- so I started experimenting with my own recipes. For the last 5 years, I have been creating vegan dishes and cooking has become one of my favourite things to do!
Now I want to share them all with you! I hope you enjoy cooking them and eating them! Little warning- i'm not one for precise measurements. I believe cooking should be fluid, casual and creative! So use your taste buds - taste as you go, adjusting quantities- maybe throw in a little bit more of this and scoop out a little bit of that! These recipes are your guidelines, but you are the cook!
